Martha Hall Foose is the author of the James Beard Award winning cookbook, SCREEN DOORS and SWEET TEA. This Mississippi native and graduate of the famed French pastry school Ecole Lenotre returns to the Classic with her newly released cookbook, A SOUTHERLY COURSE. Phil is no stranger to the ways and cooking of the South, having apprenticed with Paul Prudhomme in New Orleans.
