A Mississippi native with a wanderlust culinary spirit, Foose is another of those superbly talented southern chefs - think Frank Stitts, Donald Barickman, Lee Bros. - forcing the culinary world to forget what they thought they knew about southern cooking. She's French trained and world traveled and unafraid to blend Middle-eastern, Indian, and African flavors with staples like sweet potatoes, grits, gumbo and succotash. Prior to the publication of Screen Doors & Sweet Tea, Foose was executive chef at the Viking Culinary School, sharing her empirical knowledge with thousands of home cooks a year.
